Apple Pecan Cheesecake
1 1/2 c. Honey Graham Cracker Crumbs
1/4 c. melted butter (1/2 stick)
1 1/2 c. packed brown sugar, with 2 T. divided
4 pkg, cream cheese, softened
1 tsp. vanilla
1 c. sour cream
4 eggs
4 c. chopped pealed apples
3/4 c. chopped pecans
1 tsp. ground cinnamon
Heat oven to 325 degrees. Line 13 X 9 inch pan with foil. Mix crumbs, butter and 2 T. sugar, press onto bottom of pan and bake for 10 minutes. Beat cream cheese, 1 cup sugar and vanilla with mixer until blended. Add sour cream, blend. Add eggs, 1 at a time mixing on low after each egg just until blended. Pour over crust. Mix remaining 1/2 cup sugar, apples, pecans and cinnamon. Spoon over batter. Bake 1 hour to 1 hour and 5 minutes. Cool. Refrigerate for 4 hours. Use foil to lift cheesecake from pan before cutting, then serve.
